Lemon Dream Cheesecake

made this, minus the lemon extract (subbed 2 heaping tbsp lemon curd) and no food coloring. Also used nilla wafers for the crust. AMAZING! Soft and fluffy. topped with additional lemon curd and unsweetened whipped cream.
